I think I’ve already said this 1,000 times on this blog, but Vietnamese food is my favorite, despite only eating it for the last five years of my life. And banh mi, with it’s perfect mix of crusty baguette, savory meats, and pickled vegetables, is my very favorite dish.
But there are a ton of Vietnamese dishes I’ve never tried…such as any served with a Vietnamese caramel. And finally, I’ve resolved that problem!
On Sunday, we made these Vietnamese caramel braised pork belly banh mi sandwiches. RIDICULOUSLY good. And SO easy. Honestly, when I first saw the recipe, I was expecting them to be good, but not that good, because it just seemed that there were too few ingredients (typically I’m thinking the meat will have garlic, ginger, lemongrass, chiles, the works). But wow, this technique was mind-blowing. I’m going to use it for everything ever for the rest of my life. Please, don’t let my bad photo trick yourself into not making this dish. Make it.
